Just as I have been in over my head in Swiss Chard,  I happened upon my May issue of Yoga Journal and it’s green miso soup recipe!

Ingredients

  • 2 tbsp grapeseed oil
  • 1 cup thinly sliced onion
  • 4 cups veggie broth or water
  • 4 cups chopped chard leaves
  • 3 tbsp of white or yellow miso
  • 1 cup of the ribs of the chard, chopped
  • 2 tbsp breadcrumbs
  1. saute onion in 1 tbsp oil
  2. add broth and simmer
  3. add chard leaves (cook 3 min)
  4. add miso, let cool and the blend in batches (if you’ve got a submersion blender, you’ll be happy and do this step much easier than blender cooks)
  5. for the topping, use 1 tbsp oil and crisp breadcrumbs and chard ribs in a frying pan
