Just as I have been in over my head in Swiss Chard, I happened upon my May issue of Yoga Journal and it’s green miso soup recipe!
Ingredients
- 2 tbsp grapeseed oil
- 1 cup thinly sliced onion
- 4 cups veggie broth or water
- 4 cups chopped chard leaves
- 3 tbsp of white or yellow miso
- 1 cup of the ribs of the chard, chopped
- 2 tbsp breadcrumbs
- saute onion in 1 tbsp oil
- add broth and simmer
- add chard leaves (cook 3 min)
- add miso, let cool and the blend in batches (if you’ve got a submersion blender, you’ll be happy and do this step much easier than blender cooks)
- for the topping, use 1 tbsp oil and crisp breadcrumbs and chard ribs in a frying pan
