The Power of Mint

Mint can be invasive if not kept in check.  I pull out all of my mint after the first frost, and it keeps coming back, just small.  I know several folks who have bought homes with crazy amounts of mint growing in the yard.  The best thing to do is keep pulling, smoother with cardboard, and pull some more.  Eventually you can get it under control, but in the meantime, might as well use the mint you’ve got!

 

Mint Salad

  • 3 tomatoes
  • 2 cucumbers
  • 1 cup red onion
  • 3 tbsp olive oil
  • 1/3 cup red wine vinegar
  • 1/2 cup mint, finely chopped
  • 1 tbsp sugar
  • salt and pepper
  1. combine cucumber, vinegar, salt, sugar in large bowl and let sit for an hour
  2. add tomato, onion, mint, and oil….season to your liking with salt and pepper

Mint and Parsley Pesto

  • 1 cup mint
  • 1/2 cup parsley
  • 1 clove garlic
  • 2 tbsp pine nuts
  • 2 tbsp Parmesan
  • 3 tbsp olive oil
  • salt and pepper
  1. put all ingredients in the food processor and then season to your liking

Mojito

  • 10 mint leaves
  • 1/2 lime
  • 2 tbps sugar
  • ice
  • white rum
  • club soda
  1. crush lime and mint in the bottom of your glass, stir in sugar
  2. add ice, rum, and club soda
  3. enjoy and sit in the garden
